Why do critics of Christianity portray the faith as if the majority are Evangelical/fundamentalists?

Is this not just a canard designed to be deliberately dishonest in order to paint all Christians as ignorant, anti-science, creationist, biblical literalists? Is it rational to engage in that type of dishonesty?
